Dessert tonight was Oreo cheesecake. This cheesecake was so yummy. I really liked the double layer of chocolate cookie goodness.

Ingredients:
For Crust:
  • 25 Oreo cookies (about 2 1/2 c. crumbs)
  • 1/4 c. (1/2 stick) unsalted butter, melted
For the Filling:
  • 2 pkg. (8 oz. each) Cream Cheese, softened
  • 1/2 teaspoon vanilla
  • 1/2 cup sugar
  • 1/2 cup heavy whipping cream
  • 1/4 cup milk
  • 2 eggs
  • 2-3 Oreo cookies, coarsely chopped
For the Topping:
  • 6 Oreo Cookies
Directions:
  • Preheat oven to 325 degrees F.
To prepare crust: Break up cookies and place in food processor fitted with metal blade; process until crumbs form. Add butter and mix until blended. Press into a 9-inch spring form pan that has been lined on the bottom and side with parchment paper. Press the crumb mixture into the bottom of the pan and about 2/3 the way up the side. Refrigerate while preparing filling.

To prepare filling: Beat the cream cheese until light and fluffy with an electric mixer set on low. Gradually mix in vanilla, sugar, milk, and whipping cream and mix until smooth. Add eggs one at a time; mix just until blended. Stir in Oreo cookies. Pour mixture into the Oreo crust.
Topping: Break up cookies and place in food processor fitted with metal blade; process until crumbs form. Sprinkle the Oreo cookies crumbs on top.
Bake for 35 to 40 minutes or until center is almost set. Cool. Refrigerate 4 hours or overnight.
Enjoy!
